3 lbs beef chuck roast
4 tsp salt
1 Tbsp black pepper
4 Tbsp flour
1 beef boullion
¼ onion
3 garlic cloves
10 NM or guajillo chile pods (NM is spicy and guajillo is not spicy)
2 tsp cumin ground
2 ½ tsp oregano
2 bay leaves
3 ½ cups water

Sauce:

Clean chlies and put them with onion in a pot with enough water to cover. Place on high heat and bring to boil. Once at a boil remove chiles and onion from pot into blender. Discard the boiled water. Add to the blender 3 ½ cups water along with oregano, cumin, garlic, and beef boullion.

Cut meat into chunks and season with salt and pepper. Coat meat with flour. Sear meat 1 minute each side in 2 tbsp oil. Remove seared meat from pan.

Once all meat is seared, add the blended sauce to pan. Add beef back to pan, place 2 bay leaves on top, and bring to boil. Reduce to a simmer for 1 hrs 30 min or until meat is tender.
