4 - 5 tomatillos

1 jalapeno

5 garlic cloves

Head of cilantro

1/2 tsp salt

Medium sized onion

Directions:
1. Roast the tomatillos, jalapeno, and garlic cloves on the grille. Make sure the tomatillos are soft and squishy but do not lose their juice.

2. Let cool for about 3-5 minutes. Then blend together. The heat level of your salsa will depend on the amount of jalapeno seeds you add to the mixture.

3. Dice the onion and set aside.

4. Once tomatillo mixture is pureed to the consistency you desire, add 1/3 cup loosely packed and roughly chopped cilantro and blitz again.

5. Rinse the diced onion and add.

6. Season with salt (1/2 tsp) or to your taste.

You can do the roasting in the oven if you need, but use the broiler so that you get a good char.

If you need to thin out the salsa, use about 1/4 cup of water if it's too thick.
