3/4 cup (1 1/2 sticks) butter, softened
1/2 cup granulated sugar
1/4 cup packed brown sugar
1 large egg
1 Tbsp. pure vanilla extract
3/4 cup mashed bananas (from about 2 bananas
1 1/2 cups all-purpose flour
1 tsp. ground cinnamon
1 tsp. baking soda
1/2 tsp. kosher salt
3 cups old-fashioned oats
2 cups chocolate chips

Step 1
Preheat oven to 350° and line two baking sheets with parchment paper. In a large bowl using a hand mixer, beat butter and sugars until light and fluffy. Add egg and vanilla and beat until combined, then stir in mashed banana.

Step 2
In another large bowl whisk flour, baking soda, salt, and cinnamon until combined. Add mixture to wet ingredients and mix until just combined. Fold in oats and most chocolate chips. Save some for placing on top of each cookie.

Step 3
Scoop dough onto baking sheets about 2” apart. Press remaining chocolate chips on top. Bake until set and beginning to become golden, about 12 - 15 minutes depending on size of scoop used.
