Hot Corn Dip
1 can corn, drained
2 cans (4 oz. each) chopped green chiles, drained
½ c. chopped sweet red pepper
1 c. (4 oz.) shredded monterey jack cheese
2 T. chopped jalapeno pepper
1 c. mayonnaise (don't use light or low-fat variety)
½ c. grated parmesan cheese
2 T. sliced ripe olives
Tortilla chips
• In a bowl, combine the corn, chiles, red pepper, monterey jack cheese and jalapeno. Stir in mayonnaise and parmesan cheese.
• Transfer to an ungreased 2-quart baking dish. Cover and bake at 350 degrees for 30 minutes or until heated through. Sprinkle with olives. Serve with tortilla chips. Makes about 3 cups.
