Pineapple Sour Cream Pie
9" Pastry Shell (Baked)
1/2 C sugar
1/4 C flour
1/4 t salt
1 can (20 oz.) crushed pineapple (undrained)
1 C (8 oz.) sour cream
1 T lemon juice
3 large egg yolks, slightly beaten
Meringue
3 large egg whites
1/4 t cream of tartar
6 T sugar
In heavy medium saucepan, combine sugar, flour and salt. Stir in egg yolks, undrained pineapple, sour cream and lemon juice. Mix well. Cook and stir ove medium heat until thickened and bubbly. Reduce heat, cook and stir 2 more minutes. Remove from heat and let set for 10 minutes. Pour into baked past shell.
For meringue, beat egg whites, until foamy. Add cream of tartar and beat until it holds shape. Gradually add sugar, beating until the sugar is dissolves Top pie with meringue and brown in preheated 400 degree oven.
