1 T oil
1 tsp minced garlic
1/4 chopped onion

1 cup rice
1/2 can (14 oz) of stewed tomatoes
2 tsp. chicken bouillon

Directions:
Directions:
Cook oil, minced garlic, and onions on medium to medium-low and saute for 4-5 minutes.

Add 1 cup rice and continue cooking until rice is golden.

Chop up stewed tomatoes and put in a two-cup container. Add the juice from the stewed tomatoes and chicken bouillon to make two cups.

Add to the rice and bring to a boil.

Cover and cook 20 minutes on low. Do NOT uncover.

After 20 minutes, uncover, fluff rice with fork and cover. Cook 5 more minutes.
