4 russet potatoes 8-10 oz each
4 slices of bacon cut into 1/2 inch
1/4 cup sour cream
3 T melted butter
1/4 tsp salt
1/4 tsp pepper
3/4 cups shredded sharp cheddar
4 scallions sliced thin
2 T butter

Directions:
Directions:
Poke potatoes 6 pokes each potato, then roll them in 1/2 cup water with 1 T salt.
Place potatoes on a wire rack and into oven 450 degrees till potatoes are 205 degrees aprox 50-60 minutes.

remove potatoes and Reduce oven to 400. Potatoes cool about 15 minutes.
Cook bacon and
Cut top off of potatoes and remove filling.

Add mashed filling, butter, sour cream, salt, and pepper then stir together.
Add cheese, scallions and bacon and stir just till mixed
Stuff potatoes then rough up the top so the butter will cover.

Brush skillet with 1 T melted butter then add the potatoes to the skillet.
Brush potatoes with 1 T melted butter then put in oven for 15-20 minutes till hot inside and browned on top.
