Crust:
1 package (250g) Biscoff cookies crushed
6 tbsp butter - melted

Cake:
2 ½ c cream cheese - room temp
¼ c berry sugar (superfine)
1 c Biscoff spread - smooth
1 ¼ c heavy cream 35%

Topping:
½ c Biscoff spread melted
¼ c Biscoff cookies crushed

8-inch springform pan - parchment lined.
1. Combine crushed Biscoff cookies with melted butter, press firmly into pan and chill.
2. In stand mixer using a paddle attachment, add the cream cheese sugar and beat mixing for two minutes. Add Biscoff spread and add whipping cream and beat on medium for several minutes until fluffy and well thickened (don't rush this).
3. Pour on top of crust and chill for at least 6 hours, overnight is better!
4. Melt your Biscoff spread and pour over the top of the cake. Use a rubber spatula to ensure all edges are covered. Sprinkle the sides with extra crushed cookies and refrigerate for a further 30 minutes, to firm up.
