1 pound beef stew meat, cubed
2 tablespoons olive oil
1 onion, diced
3 cloves garlic, minced
3 carrots, sliced
2 celery stalks, sliced
1 cup pearl barley
8 cups beef broth
1 can (14.5 oz) diced tomatoes, undrained
2 bay leaves
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley for garnish

In a large pot, heat the olive oil over medium-high heat. Add the beef stew meat and brown on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.

In the same pot, add the diced onion, garlic, carrots, and celery. Sauté for 5-7 minutes until softened.

Stir in the barley, beef broth, diced tomatoes, bay leaves, thyme, salt, and pepper. Return the browned beef to the pot.
Bring the soup to a boil, then reduce the heat to low and simmer for 45-50 minutes, or until the beef is tender and the barley is fully cooked.

Remove the bay leaves and season the soup with more salt and pepper if needed. Garnish with fresh parsley before serving.
