Directions:1. Preheat the Oven to 400º F. Add parchment [a[er as Pomo goes tp up or along sheet. 2. Chill the cream by placing in the freezer for about 10-15 minutes. This step is important for creating the scones’ fluffy texture. 3. Melt the butter in a microwave-save bowl. Heat on high for 1 minute, covering with a paper towel to prevent splattering. Butter must be fully melted - let it cool slightly. 4. Combine dry ingredients in a medium bowl by whisking together the baking powder, baking soda, sugar, salt, lemon zest. 5. Mix wet ingredients after chilling the combined cream and butter. Stir until small clumps form which helps to activate a fluffy texture. 6. Form the dough after mixing the wet and dry ingredients together. Gently mix with a rubber spatula until a thick dough forms. Do not over mix - just incorporate all the flour. 7. Gently fold half the raspberries into the dough. Then fold in the remaining berries. 8. Use a cookie scoop to ensure even portions while placing on a prepared baking sheet and allowing about 2 inches apart to allow for spreading while baking. 9. Refrigerate the scones for at least 15 minutes before baking. This step helps them maintain their shape in the oven. 10. Bake for 18-22 minutes until the edges are golden brown. (If they aren’t spreading by 9 minutes, tap the pan on the counter a few times and continue baking. |

Ingredients: 2 C. Powdered sugar 3 Tbsp. Milk or half and half 1 Tbsp. Fresh lemon juice

Directions:1. While scones are baking, whisk together 2 cups of powdered sugar, 3 tablespoons of milk or cream and 1 tablespoon f fresh lemon in a bowl until smooth. 2. Once baked, allow to cool on a wire rack. Drizzle or spoon the lemon glaze over the top letting it drip down the sides. Let the glaze set for 15 minutes before serving. |
