Chicken:
2 chicken breasts, boneless and skinless
1 tablespoon Cajun seasoning
Juice of 1 lime
1 tablespoon olive oil

Salad:
2 ears of corn, kernels removed (or 1 ½ cups canned or frozen corn, drained)
1 avocado, diced
1 cup cherry tomatoes, halved
½ red onion, finely chopped
¼ cup cilantro, chopped
Juice of 1 lime
Salt and pepper to taste

Rub the chicken breasts with Cajun seasoning, lime juice, and olive oil. Let marinate for at least 15 minutes.

Grill the chicken over medium-high heat for 6-7 minutes on each side, or until fully cooked. Let cool, then slice.

In a large bowl, combine corn, avocado, cherry tomatoes, red onion, and cilantro.

Add the sliced chicken to the salad.

Squeeze lime juice over the salad, and season with salt and pepper to taste.

Toss gently to combine all ingredients.
