½ cup butter
¼ cup honey
4 garlic cloves, minced (or 2 tsp garlic powder)
½ tsp salt

2 tbsp fresh chopped parsley

Preheat oven to 425°. This high temperature is key to achieving the perfect roast on your carrots, giving them a tender interior and slightly crispy edges.

In a medium-sized pan, melt the butter over medium heat. Once melted, add the honey and stir until fully combined. The honey should melt into the butter, creating a luscious sauce.

Add the minced garlic to the pan. If you’re using garlic powder, add it at this stage as well. Cook for about 30 seconds, just until the garlic becomes fragrant. Be careful not to burn the garlic, as it can turn bitter.

Add the baby carrots to the pan, tossing them to ensure they are evenly coated with the honey garlic butter sauce. Let the sauce thicken for about a minute, allowing the flavors to meld.

Season the carrots with salt and cracked black pepper to taste.

Transfer the coated carrots to a greased baking sheet, arranging them in a single layer. This ensures even roasting. Place the baking sheet in the preheated oven and roast for about 20 minutes, or until the carrots are fork-tender.

For an added touch of texture, turn the broiler on high and broil the carrots for an additional 2-3 minutes. This step will crisp up the edges, adding a delightful crunch to each bite.
