8 oz cream cheese, softened
¼ c powdered sugar
1 tsp vanilla extract
½ c diced fresh strawberries

French Toast:
8-10 slices bread (brioche or challah)
2-3 large eggs
½ c milk
1 tsp vanilla extract

butter or oil, for cooking

Make Filling:
In a medium mixing bowl, beat the softened cream cheese, powdered sugar and vanilla extract until smooth and creamy. Then gently fold in diced strawberries. Set aside.

Make French Toast:
In a shallow dish/bowl, whisk eggs, milk and vanilla extract until well combined. Then spread about 2 tablespoons of the filling onto 1 slice of bread and top with another slice to create a sandwich. Repeat with remaining bread and filling. Dip each stuffed sandwich into egg mixture coating both sides evenly.

Cook French Toast:
Place sandwiches in skillet or on griddle and cook until golden brown on both sides, approximately 3-4 minutes per side. On griddle set the temperature to 350º.
