2 large (340g) navel oranges
1 small ( 57g) lemon
2 c water
2 c sugar

1. Wash fruit and chop finely, removing any seeds.
2. Simmer fruit and water over medium heat. Remove and cover for 24 hours, to draw out the pectin.
3. Return to a simmer, cooking 20 -60 min, until reduced by half.
4. Add the sugar and dissolved. Increase heat to medium-high for15-20 more minutes, to thicken, stirring constantly.
5. Test by placing a spoonful on a cold plate and in fridge for a minute. The fruit should gel and hold its shape.
6. Cool then seal and chill for up to six weeks.
