1 cup butter
2 cups brown sugar light or use dark for dark caramel
½ tsp salt
½ cup karo syrup
1 "sloppy" tsp of vanilla extract
½ tsp baking soda

Directions:
Directions:
Bring butter, brown sugar, salt, and karo syrup to a boil and cook for 5 minutes. Turn off heat and stir in vanilla.
Finally, add baking soda stirring well and let foam up.

Pour while hot over premade popcorn.

Preheat oven to 250º and bake for 1 hour ... removing from oven to stir every 15 min to stir avoiding crumbling.

This is my wife's Aunt Kathy's recipe and this has been a hit at my work.. everybody says the same thing, that's it's "the best Caramel popcorn I've ever had"... And I concur!!

This recipe covers approximately 2 turkey size foil trays full of popcorn ... and can vary depending on your popcorn machine.
