5 eggs - room temp
1½ c milk -hot
½ c whipping cream
6 tbsp butter - melted
7 sheets phyllo - room temp
2 tsp vanilla
1 tsp zest (orange or lemon
⅛ tsp salt

Preheat 350º , Crinkle parchment to fit into bottom of pan and up sides alittle, then butter paper. Placed on a baking tray.
1. Using 6 -7 phyllo sheets, butter each sheet and sprinkle with cinnamon. Gathering in loose accordion like folds, roll and place in spiral, following each sheet until entire bottom is covered. Brush remaining butter over top.
2. Bake 30 min.
Custard:
3. Beat sugar, salt, eggs, semolina, until creamed together.
4. Scald cream and milk then add to sugar mixture a little at a time, whisking constantly.
5. Heat all to scalding, remove, then add zest and vanilla.
6. Pour over phyllo as soon as out of oven, custard will fill between phyllo.
7. Bake 20-30 min till set. Let cool, remove from springform. Sprinkle with powdered sugar and cinnamon before serving
