1 unbaked deep dish pie crust
4 eggs
¾ c sugar
¼ tsp salt
1 tsp vanilla
1 c heavy cream
1½ c milk
½ tsp nutmeg

Directions:
Preheat oven 400º
1. Separate egg, and set both white and yolk aside.
2. Brush crust with beated egg white and prebake for 7-8 min, let cool.
3. Whisk together 3 eggs and remaining white and other yolk. Add sugar, salt, vanilla cream and milk.
4. Pour into pie shell and sprinkle with nutmeg.
5. Bake 35-45 min or until knife in centre comes out clean.
7. Cool to room temperature and chill in fridge.
