2 lb. cucumbers, thinly sliced or chunks
2-3 tbsp. apple cider vinegar or rice vinegar
salt and pepper to taste
2 tbsp. fresh dill, basil, or chives, chopped
1 small red onion, thinly sliced, optional
cherry tomatoes, halved, optional
feta cheese, optional
1 tsp. sugar, optional

Directions:
Directions:
Combine the cucumber, vinegar choice, salt, and pepper in a medium bowl (also, if using, add in onion, tomatoes, feta). Toss gently to combine; let stand for 30 minutes.

Stir in dill, basil, or chives just before serving.
