Ingredients: Dough; -1 cup (125g) all purpose flour -3 to 4 tsp (13-18g) olive oil -1/3 cup (80ml) water -1/4 tsp (5g) salt
Topping; -2 tbsp (15g) sour cream -1/2 red onion , thinly sliced -1/2 cup (70g) firm farmer's cheese or Monterey Jack cheese, grated -2 slices prosciutto, chopped
Feel free to use other toppings instead of or with the onion and prosciutto, but not too many as it's a very light crust. You can also make a delicious tart by topping with cinnamon and sliced apples.

Directions:-Preheat the oven to 475-500 F (250-260 C)
-In a large bowl combine the flour and salt. Stir in the oil and water until mixture begins to stick together. Knead well until dough forms. Let the dough then rest for 30 minutes, covered. Divide the dough into two pieces. Dust a piece of parchment paper with flour and roll out into 1/8-inch (3mm) thick. Repeat with the remaining dough. Transfer dough and parchment paper to a baking sheet
Spread dough with sour cream. Sprinkle the cheese on top, then layer onions and prosciutto.
Bake for about 4-5 minutes until golden brown. |

Notes: Karin and I had the fortune to take a river cruise in August of 2022 where we had Flammkuchen for our first time in Strasburg, Germany. It was a wonderful light snack or meal. Later, on the boat we learned how to prepare one and enjoyed it every time!
