1¼ c sugar
1c oil
1¼ c orange juice
2 tbsp zest
1 package phyllo (250g)
1 c yogurt 2%
1tsp vanilla
1 tbsp heaped baking powder
5 egg
pinch salt

Syrup
1⅔ c water
1⅔ c sugar
zest: 1 orange
1 cinnamon stick (optional)

Directions:
Preheat oven 350º. Grease 9X12 pan.
1. Syrup: Add all ingredients and bring to the boil. Simmer for 5-10 minutes, until the sugar is dissolved and the syrup has thickened. Set aside to cool.
2. Bring phyllo to room temperature, cut roll into 1.5 inch pieces onto sheets dry overnight or quickly place in oven to dry 350 until dry then crumble.
4. Cake: Whisk together vegetable oil, sugar and eggs. Add the yogurt, the orange juice, the orange zest and the vanilla extract and baking powder and mix until smooth.
4. Add crumbled filo gradually while mixing.
5. Add to prepared pan and bake for 40-50 minutes until golden and cooked through.
6. Poke surface with toothpick and ladle cooled syrup over hot cake.
6. Allow 1 hour (or in fridge overnight) before serving to allow syrup to be absorbed.
