1 c dry white kidney beans
4 cl garlic crushed
⅓ c olive oil
˝ c dry pasta (durum semolina)
1.5 L water
Salt and pepper to taste

Directions:
1. Soak beans for 8 hours
2. In a pan, lightly sauté crushed garlic in EVO. Drain soaked beans and add to the pan. Add 1 litre of fresh heated water. Add salt and cook covered for 1 hour, or until ⅔ cooked. May vary.
3. Add pasta and simmer until pasta is done. Add small amounts of water as is needed for about 25 min. Ladle into bowls. Serve with Parmesan cheese as an option.
