2 c beets, cooked, cooled, grated
½ c butter, melted, cooled
½ c olive oil
½ c brown sugar
½ c sugar
½ c maple syrup
3 eggs, room temperature
1 tsp vanilla
2 c cake flour
¾ c cocoa
2 tsp baking soda
¼ tsp salt

Preheat 350º. Spray and line two 9″ round cake pans with parchment paper.
1. Grate 2 c beets. Place in a colander and let drain.
2. Whisk together the butter, oil, sugars, and maple syrup. Then add eggs and vanilla and stir to combine.
3. In a separate large bowl, whisk together flour, cocoa, baking soda and salt.
4. Slowly add dry ingredients to wet ingredients and stir to combine.
5. Fold in beets and stir to combine.
6. Pour batter into prepared cake pans and use a spatula to even out the top if needed.
7. Bake for 25 minutes or until a toothpick comes out clean. Cool in pan for 15-30 minutes. Eat naked or with favourite icing.
