2 lbs boneless skinless chicken thighs -cubed
1 lb andouille sausage -sliced
¾ c veg oil
1 c flour
2 c onion
1 c celery
1 c green bell pepper.
2 cl garlic -minced
8 c chicken broth
2 c okra
2 bay leaves
1 tbsp Worcestershire sauce
1 tsp hot sauce
¾ tsp thyme
Salt and pepper to taste
Garnish: chopped green onion

Directions:

1. Dice all vegetables and set aside.
2. In a large Dutch oven brown sausage and chicken and sausage over medium heat. Set aside meat, reserving drippings in pot.
3. Add oil to drippings in pot, and heat over medium-low. Whisk in flour, whisking frequently, until mixture is chocolate colored, 30 to 40 min. Do not skip this browning step.
4. Stir in onion, celery, bell pepper, and garlic; cook until vegetables are tender.
5. Gradually stir in broth until well combined. Combine all ingredients and bring to a boil. Reduce heat, and simmer, uncovered, stirring occasionally, until chicken is very tender and gumbo has thickened, about 20-30 minutes.
Serve with rice, and garnish with green onion.
