Pie Dough 1 9” crust
1½ c flour
1 tsp salt
½ c cold butter cubed
4-5 Tbsp cold buttermilk

Filling
2c sugar
¼ c flour
½ tsp salt
½ c butter melted and cooled
4 eggs
1 Tbsp satsuma zest
½ tsp vanilla
1 c buttermilk
Segments of satsuma and whipped cream to garnish

Set rack to bottom ⅓ of oven, 400º
Pie crust:
1. In food processor, pulse flour and salt. Add butter and pulse to pea sized crumble.
2. Add 4 Tbsp buttermilk slowly until dough comes together when pinched.
3. Turn out dough, shape to disc, wrap and chill 30 minutes-3 days.
4. Roll out ⅛ thick and place into pie plate. Trim and crimp. Freeze 15 min.
Filling:
1. Whisk sugar, flour, salt. Add eggs, melted butter, zest and vanilla. Slowly add buttermilk till just combined.
2. Pour into prepared crust.
Bake for 15min, reduce 325º until just set, centre at 200º, about 35 min. Pie will be puffed but fall as cools.
Serve chilled or cooled, garnished with satsuma slices and whipped cream.
