⅔ c plus 3 Tbsp butter
1⅓ sugar
4 eggs
3 tsp Mayer lemon zest
1 tsp lemon extract
2 c flour
½ tsp salt
½ c heavy cream room temp.
½ c fresh cranberries
2½ c icing sugar
3-4 tbsp milk

Directions:
Directions:
Preheat oven 325º, grease and flour 9x5 loaf pan and line with parchment.
1. Beat ⅔ c butter and sugar until fluffy, scraping sides.
2. Add eggs, one at a time incorporating between each. Add 1 tsp zest and extract.
3. Mix all dry ingredients in another bowl.
4. Mix ⅓ flour in butter then ⅓ cream, repeat until just mixed.
5. Fold in cranberries.
6. Pour in pan and bake until golden - 1 hour 25 min. Let cool 10 min and remove from pan.
Icing: mix 3 tbsp of melted butter into icing sugar and 1 tsp zest. Add milk until desired consistency, 1 tbsp at a time, drizzle over cooled cake.
