1 cup sugar
1 stick unsalted butter, melted
3 T Amaretto or Brandy
2 tsp pure almond extract
1 tsp pure vanilla extract
1 cup coarsely chopped almonds
1 cup{optional) our your favorite mini chips, chocolate, butterscotch, etc
3 large eggs, at room temperature
2 3/4 cups all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt

Stir together sugar, butter, your choir of spirits and extracts in a large bowl. Stir in almonds, chips , if used, and eggs.
Stir in baking powder and salt. Chill dough, covered, for 30 minutes. Using moist hands, halve dough and form 2 -16 by 2 loaves on an ungreased large baking sheet. Bake until golden, about 30 minutes. Transfer loaves to a rack and cook 15 minutes. Cut loaves in 3/4" slices with a serrated knife(I like the angle cut). Arrange biscotti , cut side down on a clean baking sheet and bake until golden, 20-25 minutes. Transfer to rack to cool.

I love this recipe for many reasons. First, you do not need any equipment other than a bowl, sharp serrated knife, spoon, rack and baking sheets. No mixer, food processor, etc.
Second, you can customize if you want. Use spirits, use chips, or not! Different nuts-go for it!
Third, you can underbake a bit if you want a softer biscotti that does not require dipping in coffee or wine, as they do in Italy.
Fourth, they are so good!
