2 pounds fingerling potatoes cleaned and cut in half lengthwise
2 tablespoons olive oil
1 teaspoon dried garlic powder
1 teaspoon ground paprika
1 teaspoon oregano
1 teaspoon basil
1 teaspoon chili powder
1 teaspoon chipotle chili powder
½ teaspoon salt
black pepper

Preheat the oven to 420°. Place a dark-colored baking sheet in the oven to heat up. Do not use parchment paper or silicone on pan. If you really must line the pan use foil but best if you use nothing.

In a large bowl add olive oil, garlic powder, paprika, Italian seasoning, salt and black pepper. Wash and cut the potatoes lengthwise. Add potatoes to bowl of seasonings and carefully toss so all potatoes are evenly coated.

Spread out potatoes in a single layer with their cut side DOWN on the preheated baking sheet. Bake the potatoes for around 25-30 minutes, or until tender on the inside and crispy on the outside. You can finish under the broiler for 2-3 minutes to really crisp up the top as well.

Change the seasoning as desired such as Provencal herbs. Use garlic powder and not fresh garlic for this recipe.
