Steaming the Crackers

2 sleeves saltine crackers
1 stick butter, browned (preparation instructions below)
2 1/4 C whole milk

Place saltine crackers in an ungreased 1 1/2-pt. covered
baking dish. Brown the butter in a saucepan, and add the milk to the butter. Heat the mixture to almost boiling, and pour on top of crackers, gently pressing them into milk.

Cover and let sit for 10 minutes, or put in the oven at 300° for 30 minutes to keep warm. Serve with poached eggs.
 

Brown Butter

1.) Grab a wide heavy-bottomed pan and place it over medium-low heat.
2.) Add the butter. As it melts, continuously swirl the butter around the pan. The butter will go from brown to burnt quickly, so stay close.
3.) The butter is going to foam right before it turns brown. Keep swirling the butter over the heat until it is light brown in color and smells nutty.

This dish is another one of those Pennsylvania Dutch delicacies. Some Dutchies refer to this dish as "stewed crackers," but whatever you want to call it, be sure to make this when you want something unique & comforting for breakfast. Wear your fat pants.
