2¼ c flour
1½ tsp baking powder
1½ tsp baking soda
1 tbsp cinnamon
1 tbsp ginger
1 tsp salt
3 large eggs
1 c sugar
¾ c packed brown sugar
1 c apple sauce
1 tbsp vanilla paste
2 c grated carrots
1 c drained crushed pineapple (save juice)
1 c chopped toasted walnuts

FROSTING:

½ c butter, room temp
1 block (8 oz) cream cheese, at room temperature
1 tsp vanilla paste
4 c icing sugar
¼ tsp cinnamon
½ tsp ginger
Reserved pineapple juice

Directions:
Directions:
Preheat oven to 350º. Prepare 8 x 8-inch baking pans with parchment paper, with some overhang, notch out corners so it lays flat.
1. Add flour, baking powder, baking soda, cinnamon, ginger, and salt to a medium bowl and whisk to combine.
2. In a separate bowl, combine the eggs, granulated sugar, brown sugar, oil, and vanilla. Whisk well until smooth. Stir in the flour mixture until smooth.
5. Fold in carrots, pineapple and walnuts.
6. Divide batter into 2 pans.
7. Bake 45 min, transfer to a rack to cool completely.

Frosting:
1. Beat the butter and cream cheese until light and fluffy.
2. Add remaining and slowly beat, adding as much pineapple juice as is necessary for a smooth frosting.
3. Once cakes are cool, frost middle top and sides.
