Broth:
1 kg lamb cut into large pieces
2 tbsp olive oil
1 onion
2 heads of garlic
2 stalks of celery

Soup:
1 carrot finely diced
1 stick of celery finely diced.
1 onion finely diced
1 kg ripe tomatoes grated
Chilli puree to taste
1 c orzo pasta
Salt and pepper
Pecorino or Parmesan- grated to serve

Directions:
Directions:
1. Stock: Place lamb in pot cover with water.. Let it come to a light boil and skim the surface to remove any impurities. Add the celery, garlic and onion. Season to taste. Simmer for around 1 hour. Strain reserving lamb.
2. Soup: combine olive oil and sauté the diced carrot, onion and celery over medium heat.
3. Add the strained broth and cook for 15 minutes.
4. Next add the grated tomato and chilli puree, cook for another 15 minutes.
5. Add rinsed orzo and gently stir so that it doesn’t stick to the bottom of the pot. Cook until the pasta is tender.
6. Return the meat to the soup to warm through. Serve the soup iwith grated cheese on the side
