3 lbs chuck steak - cubed
1 onion - fine dice
2 medium carrots peeled and chopped
2 celery stalks finely chopped
4 garlic cloves crushed
1 sprig rosemary
4 sprigs fresh thyme
1 can ale (Alley Cat)
2 c beef stock
salt and black pepper to taste
400 g (14oz) puff pastry thawed
1 egg beaten
1 tbsp oil
1 tbsp flour

1. Trim beef of any excess fat grissle, then cube into 1.5 inch chunks then pat dry with paper towels and salt and pepper well.
2. Brown in Dutch oven in batches, and set aside.
3. Sauté the onion, celery, carrots, garlic and herbs for 5 minutes.
4. Return beef along with any juices, add the ale and beef stock. Season with salt and pepper then cover with a lid and reduce the heat.
5. Place in an oven preheated to 320ºF for 2-3 hours (until the meat is fall-apart tender). Checkthrough cooking and top up with more liquid if necessary to avoid drying out.
6. If needed to thicken, add a tablespoon of flour mixed with stock or water for the last 10 minutes of cooking.
7. Pour into a pie dish then top with the puff pastry.
8. Crimp the edges then brush with beaten egg and cut a few slits into the center.
9. Bake for 20-25 minutes until the pastry is golden brown and puffed.
Remove from the oven, allow to rest for 5 minutes then serve.
