Cake:
2 c flour
1 c sugar
2 tsp baking soda
1½ tsp vanilla extract
½ c cocoa
1 c mayonnaise
1 c water lukewarm

French Silk Frosting:
¾ c butter softened, but still cool
1 c sugar (not icing sugar)
1½ tsp vanilla
3 oz unsweetened Baker’s chocolate melted and cooled
3 eggs cold

1. Preheat oven to 350°F. Grease and flour a 9x13 inch baking dish.
2. Mix together all the ingredients in a large bowl.
3. Pour into prepared baking dish.
4. Bake about 30 minutes or until a toothpick inserted in the centre comes out clean.
Allow to cool completely.

French Silk Frosting:
5. Using a mixer (chilled bowl) beat butter and sugar until fluffy & fluffy. Scrape bowl as needed.
6. Add cooled melted chocolate and vanilla, beat until combined.
7. With whisk attachment, add eggs one at a time, mixing and scraping after each addition. Frosting will be fairly runny.
8. Place entire bowl with whisk into the fridge to chill for 30mins (take out to whip every 10mins).
Frost cooled cake with knife or piping bag
