1 kg good-quality stewing beef, cut into 3" chunks
24 shallots or pearl onions, peeled
½ c olive oil
4 cloves garlic - fine chop
¾ of a cup red wine
3 tbsp red wine vinegar
1 c beef stock
⅓ of a cup cognac
4 ripe tomatoes (peeled) or can chopped tomatoes (22 oz)
1 tbsp tomato paste
1 tsp oregano
½ tsp sugar
2 bay leaf
6-8 peppercorns
2-3 cinnamon stick
3–4 whole cloves
salt and freshly ground pepper
1½ c water

Directions:

1. In a pot, heat the oil over medium heat and saute the peeled onions for 5-10 minutes or until golden and soft. Set aside.
2. Brown the beef in batches in the pot. Don't overcrowd or it will not sear. Set aside.
​3. Add beef with all of the ingredients. Bring to a boil. Reduce to simmer for 1 hour 45 minutes or until the sauce has thickened and the beef is tender.
4. Check the seasoning and add some more salt if needed.​
Serve with rice, orzo hearty bread or mashed potatoes.​
