3 lbs fresh strawberries, hulled
3 c granulated sugar
30 crabapples or 3 Granny smith apple, chopped
1 lemon
½ c fresh blueberries (optional)

Directions:
1. Wash and hull strawberries. Cut the larger strawberries in half or quarters and leave the small ones whole.
2. Bring apples and enough water to come half way up apples. Bring to boil, covered, and reduce to medium and cook till collapses. Strain in sieve and this will become our natural pectin.
3. Place the strawberries in a deep, heavy-bottomed pot toss them with the sugar.
4. Bring the mixture to a boil over medium heat, stirring often.
5. Add the puree and blueberries and continue to cook the mixture at a rolling boil, stirring occasionally, until the jam reaches 220 º F on a candy thermometer. This should take 25 to 35 minutes. Skim and discard any foam that rises to the top.


For Canning, open bath can for 10 min, or keep in fridge for up to 2 weeks
