500 g yellow split peas
2 red onions, rough chop
1 white onion fine chop
2 cloves garlic
1L chicken broth
2 lemons
⅓ c olive oil
˝ c cherry tomatoes
˝ red pepper
oregano
salt and pepper

Directions:
Directions:
1. Rinse the split peas.
2. Heat a large pot over medium-high heat; add 2-3 tbsp olive oil sauté the chopped onions until begin to caramelize. Add in the garlic for one minute, add peas..
3. Pour in the warm chicken broth and the olive oil, turn the heat down to medium. Season well with salt and pepper.
4. Simmer with the lid on, until the split peas are thick and mushy. While the split peas boil, skim any foam that surfaces, cook 30 - 40 minutes.
5. Add lemon juice and transfer the mixture, puree in food processor.. Adjust seasoning. set aside - this will thicken as cools.
6. Garnish top with slivered onion and minced red pepper, cherry tomatoes (halved) and oregano.
7.Serve with Pita or veggies.
