12 oz. chorizo, cooked and fat drained
12 corn tortillas, cut into strips
1 cup shredded, Mexican blend cheese
8 large eggs, beaten until frothy

Directions:
Directions:
Preheat the oven to 350º.

Spray an 11x7-inch baking dish with nonstick cooking spray, set aside.

Combine the tortilla strips, chorizo, cheese, and eggs in the prepared baking dish. Spread the mixture evenly.

Bake 25 minutes on the center rack.

Let cool before cutting into squares and serve!
