4 pieces veal shank
1 onion sliced
1 bouquet garni (tied thyme parsley and bay)
2 medium carrots (small cube)
2 cl garlic
1 c white wine
4 c beef stock
4 tomatoes, peeled seeded chopped
2 tbsp olive oil
flour for dredging
Salt and pepper

Directions:
Directions:
1. Season meat, dredge in flour and brown in batches in hot oil. Remove and set meat aside.
2. In same oil, sauté onion and carrot , add garlic cook 1 min more.
3. Return meat, add wine and reduce till almost evaporated.
4. Stir in tomatoes and stock, simmer 1.5 hours, adding stock as is necessary.
