12 c tomatoes -skinned diced and drain
6 c pepper - dice a mix of mild and hot to taste
3 c purple onion- dice
3 ears corn, strip kernels
1 c vinegar
4 tsp sea salt
2 tsp cumin
2 tsp pepper flakes
2 tbsp Mexican oregano
1 c finely chopped cilantro
½ c garlic - mince (don’t crush)
2½ c tomato paste

Directions:
Directions:
1. Mix peppers onions cilantro corn vinegar and spices in heavy pot. Boil 5 min.
2. Add tomato, garlic and cook, once boiling, time 10 minutes. Add paste till desired thickness.
3. Ladle into clean 500 ml jars, cover with heated lids, and put on rings to finger tip tight.
4. Process in hot bath for 15 min. Remove canner from heat and allow to sit 10 min.
5. Remove from bath and cool. Seals will pop in cooling process.
Any jars that do not seal will have to be refrigerated and used immediately.

This recipe is Medium heat: onion to pepper to tomato is 1:2:4
For hotter salsa increase pepper heat and make closer to 1:4:4
