1½ c graham crumbs
3 tbsp sugar
½ c butter, melted to soft, not liquid

Filling:
4 large egg yolks
2 tbsp firmly packed lime zest (approx. 7 limes)
2 x 300 ml cans or 2½ c sweetened condensed milk
1 c lime juice - strained

whipping cream to decorate

Preheat oven 300º
1. Combine crumbs, sugar and butter, loosely mix until moist and stick slightly when pressed.
2. Lightly butter or spray pie plate. Press crumbs lightly and evenly, ensuring it goes to top of plate.
3. Bake shell for 14 minutes. remove and increase oven to 325º.
4. Whisk egg yolks, lime juice and zest. Add in condensed milk until smooth.
5. Fill baked tart with mixture; bake 20 minutes or until the centre is just set. (Top will be wet when raw, looks matte when cooked)
6. Serve at room temp and top with whipped cream for serving.
