Small amount of bacon grease
Potatoes, sliced then
Tomato, sliced
Green chile
Cheese (To your taste. I like the Mexican Oaxaca, also known as quesillo, cheese)


Amounts depend on the size of the pan you are using and how many people you will be feeding.

Directions:
1. Preheat oven to 375º
2, Pace small amount of bacon grease in the bottom of a cast iron pan
3. Layer thin sliced potatoes, then a sliced tomato, followed by green chile and then cheese.
4. Layer more potatoes and then cheese.
5. Top with green chile and more cheese
6. Bake for an hour.

*Between layers, add a small splash of milk

You can make this a main dish b adding shredded chicken on top before baking. So many delicious ways to enjoy this dish!
