2 cups yellow squash, finely chopped
1 cup onion, finely chopped
1 egg, beaten
1 tsp salt
1 tsp pepper
1/4 cup all-purpose flour
1 Tbsp baking soda

Directions:
Directions:
1, In a large bowl, combine squash, onion, egg, salt and pepper. Mix well.
2. Stir in flour, corn starch and baking soda.
3. In a skillet, heat 1/2" oil over medium-high heat.
4. Using a tablespoon, drop batter into oil.
4. Cook about 3 minutes per side or until golden brown, turning once.
5. Drain patties on wire rack.

**For variety, you can substitute part of the squash with corn and add finely chopped jalepeno or green chile!
