russet potatoes

Enough for 4 small or 2 large potatoes
4 oz goat cheese
2 T olive oil
2 T parsley
1 T shallots
1/2 t lemon zest
season to taste

Directions:
Directions:
Poke potato 6 times with a fork.
Brine with salt water and put on a wired baking sheet.
Bake at 450 degrees until potato reaches 205 degrees.
Take out and brush with vegetable oil or bacon grease (not butter)
Return to oven for 10 minutes to get crispy skin.
Cut immediately, do not allow to sit.
