3 cups milk
1 ¼ cup sugar
¼ cup plus 1 T. cornstarch
⅓ cup cocoa
¼ tsp. salt
1 ½ tsp. vanilla
3 T. butter
1 baked 9 inch pastry shell
1 cup whipping cream
3 T. powdered sugar

Directions:

Combine first 5 ingredients in a saucepan; cook over medium heat, stirring constantly, until mixture thickens and boils. Boil 1 minute, stirring constantly. Remove from heat; add vanilla and butter, stirring with a wire whisk until smooth. Pour into baked pie crust. Press plastic wrap directly onto surface of mixture; chill. Beat whipping cream until foamy; gradually add powdered sugar, beating until soft peaks form. Remove plastic wrap from the chocolate mixture; spread whipped cream over the pie, sealing to the edge.
