6 eggs
½ cup sugar
¼ tsp. salt

Scald the milk in the microwave. Beat eggs slightly; combine sugar and salt with eggs. Slowly stir the scalded milk into the egg mixture. Strain into a buttered baking dish or individual custard cups and set in a pan of hot water. Sprinkle with nutmeg and bake in a slow oven (325º) until firm. Take out and let cool to room temperature.

This recipe, from the old, worn cookbook that I bought from a dorm mate while at Auburn (the first 8 pages have disappeared over the years), is tried-and-true. It is an American version of creme bruleé or flan, except not as rich. It is a very light dessert and; with the addition of some whipped cream and fruit, makes a dessert fancy enough for company.
