1 pound carrots
½ stick butter
1 cup sugar
2 eggs
1 heaping T. of all purpose flour
½ tsp baking powder
Pinch of nutmeg
¼ cup milk
1 tsp. vanilla
1 deep dish pie shell

Directions:
Directions:
Peel and boil the carrots until tender and then drain them. While they are still hot, put into a food processor and add butter and sugar and puree. Let cool just a little bit. Add eggs, flour, baking powder, nutmeg, milk and vanilla and process until everything is smooth. Pour into a pie crust and bake at 350º for about 45 minutes or until it has risen and is lightly brown.
