4 eggs, separated
1 can sweetened condensed milk
½ cup lime juice (key lime if you can get it)
2 to 3 tsp. grated lime rind
1 8 or 9 inch baked pie shell or graham cracker crust
½ tsp. cream of tartar
⅓ cup sugar
Food coloring if desired.

Preheat oven to 350º. In a medium bowl, beat egg yolks; stir in sweetened condensed milk, lime juice, rind and food coloring if desired. Stiffly beat one egg white; fold into sweetened condensed milk mixture. Pour into the pie crust. Beat the remaining egg whites with cream of tartar until foamy; gradually add sugar, beating until stiff but not dry. Spread meringue on top of the pie, sealing carefully to edge of shell. Bake 15 minutes or until the meringue is golden brown. Cool, Chill before serving.

Key lime pie is actually supposed to be a pale yellow, not green, so I don't add food coloring. Take a bite of this, close your eyes and be carried away to Key West, where every eating establishment has its own Key Lime Pie recipe.
