2 cups cooked rice
2 cups milk
2 eggs, slightly beaten
⅓ cup sugar
½ tsp. vanilla

Mix all ingredients together until well blended. Pour into a greased 1 ½ quart casserole. Place baking dish in a shallow pan of hot water. Bake at 350º for about 1 hour or until done. Raisins may be added if desired.

This is a recipe from The Auburn Cookbook. Although I like this rice pudding, I have wished over the years that I had gotten my Grandma Zeigler's rice pudding recipe. It was unique and delicious, very sweet, eggy, and baked in a pie pan to be cut into wedges. It was more a confection that a custard. Maybe it was a private dish. She never seemed to serve it when we ate dinner with her, but I was sometimes able to find a leftover slice in the stove warming drawer left from hers and Granddaddy's lunch.
