5 whole prawns (I used size L, if you use smaller size, just add more)
½ tbs fried shallots, ½ tbs spring onions

½ tbs of each for sauce mixture: Sriracha, oyster sauce, garlic oil, sugar, fish sauce, soya sauce
Noodles of your choice

Garnish: ½ tbs fried shallots, ½ tbs spring onions, ground black pepper to taste

*if you don’t have garlic oil and fried shallots, just fry ½ tsp of minced garlic and 1tsp of minced shallots first, before adding them to the prawn stock*

1. Devein and rinse prawns well

2. Finely chop spring onions

3. In a pot, boil 300 ml of water. When water boils, add prawns, cover lid and cook for 90 secs

4. Remove prawns, deshell and add shells back into the pot. Close the lid and continue to simmer for 5 mins.

5. At the same time, boil and drain noodles according to the package’s directions. Put into a bowl.

6. After 5 mins, remove prawn shells. Add fried shallots, ½ chopped spring ononions and sauce mixture, off the heat.

7. Pour soup/sauce into bowl of noodle, add prawns, garnish with somemore fried shallots and spring onion, crack some black peppers and enjoy!
