1 ½ lbs. sweet potatoes, peeled and cut up.
¾ cup sugar
2 tsp. all-purpose flour
½ tsp. ground ginger
½ tsp. ground cinnamon
⅛ tsp. ground nutmeg
Dash of ground cloves
2 eggs, slightly beaten
⅓ cup butter, melted
1 5 oz. can evaporated milk
1 pastry for a 9 inch single crust pie

Cook sweet potatoes in lightly salted boiling water 20 to 25 minutes or until tender. Drain and mash. Used about two cups of the mashed potatoes to combine with sugar, flour, ginger, cinnamon, nutmeg, and cloves. Add eggs; beat lightly. Add butter and milk; stir until combined. Placed in a pastry-lined pie shell. Cover the edge of the pie with foil. Bake at 375º for 50-55 minutes or until a knife comes out clean. Cool. Cover and refrigerate within 2 hours.

I found this recipe in a magazine that John received, Successful Farming, September, 2003. It is a really tasty recipe for sweet potato pie. Although it calls for boiling the potatoes, baking them results in an even tastier pie.
