3 eggs, separated
1 can sweetened condensed milk
1/2 cup lemon juice
1/2 tsp. lemon zest
1 graham cracker or shortbread crust
5 T. sugar
1/4 tsp cream of tartar

Directions:
Directions:
Separate eggs and put whites aside. Beat yolks slightly. Add condensed milk and lemon juice and zest and mix thoroughly. Pour into the crust. Beat egg whites and cream of tartar until soft peaks form. Gradually add the sugar and continue to beat until stiff peaks form. Top pie with meringue. Bake at 350º about 15 minutes or until well browned. Chill about 4 hours before cutting.

After many years, I learned that if I put the can of sweetened condensed mile in a bowl of warm water for 10 minutes or so before I needed it for the recipe, it would easily pour out of the can.
